The omelette pan differs in its instructions for use from other Riess pans.
Content will slightly stick because Riess pans do not have a non-stick coating. That's the old-fashioned way of baking. The content will stick less to its pan when you follow these instructions which are especially applicable to the omelette pan. First heat the pan with high flames letting the oil or butter get hot. The intense heat will burn or scorch the surface. Now add the egg into the pan and turn the heat lower right away.
Some sticking will remain a possibility in enamel pans due to the absence of the non-stick coating. However, you will achieve more success with these instructions when frying your eggs. The main advantage of not having a non-stick coating is that it emits no substances (of a coating) that will go into your food. The surface is very smooth and non-porous. It's a healthier way of cooking, the food stays clean and with pure flavours.
Never heat enamel pans without content (water, oil, butter) and make sure that the liquid never evaporates completely. This can lead to overheating and damage to your pan. The maximum recommended temperature for cooking and frying is 220 °C. When cooking on induction please note that the temperature rises faster than with other heating options.
